If you think the only thing you can do with a can a chickpeas is make hummus, then I have something to help you out of that rut — roast them! It creates a wonderful texture, and with the addition of spices, like smoked paprika and turmeric, the chickpeas turn into a flavor bomb! They are perfect topped onto a salad, or used as a snack on their own. Watch out though. They can be addictive, and before you know it, they’ll be gone. Turmeric is anti-inflammatory, so finding ways to add it to your diet can be very beneficial.

Ingredients:

1 can of chickpeas (garbanzo beans), drained and rinsed

2 tablespoons avocado oil

1 lime, juiced

1 tablespoon smoked paprika

1 teaspoon turmeric

Instructions:

Heat oven to 400ºF

Line a baking sheet with parchment paper, or lightly oil the baking sheet to avoid sticking.

In a bowl, toss all the ingredients together. Transfer to baking sheet and roast for 15 minutes. Take out of oven, and stir. Put back in oven, and roast for 10 – 15 more minutes, or until golden and crispy. Careful not to burn.

Enjoy!
